Winter Orange and Beetroot Salad

A colourful combination of fresh and zingy with a nice crunch.


2 fresh oranges, segmented without pith

1 fresh peeled beetroot, julienned (prepare for stained fingertips or wear a glove!)

1 tablespoon of sesame seeds, toasted

1/4 cup of toasted winter walnuts or pistachios

a handful of chopped Italian parsley

a pinch of salt flakes and freshly cracked pepper

2 tablespoons of extra virgin olive oil combined with 2 tablespoons of orange juice and 1 tablespoon lemon juice.

A scattering of crushed toasted cumin seed


Toss together once all ingredients are prepared.

Serves 2-3
